Sometimes, You Just Want Fries

But sometimes, there is nothing that even resembles a potato in your house. What to do, what to do?!

Fries weren’t on my mind at breakfast though. No, what was on my mind was – what should I make that takes less than 5 min, because I need to get out the door to an appointment in 30 min?

Someone may have slept in…again.

Turns out, I have a fridge full of yogurt. Guess what I had for breakfast.


Underneath the raspberries, granola, peanut butter, and maple spread, I swear there is some Greek yogurt. Really!



I power ate my breakfast, made myself presentable, and was off to meet with my financial advisor. We’re working on a plan so I come out of school without any loans. I like plans like that 🙂

I swung past the library on the way home to pick up a couple of books I had put on hold. And by swung past, I mean, I drove past my house to go to the library, since it’s in the opposite direction from my bank.


Just a couple of read from someone’s healthy eating list. Hopefully I get to them before they are due back. 

Lunch time came around, and I was ready for some fries. Okay, so I wasn’t actually craving fries. But I was looking for a way to utilize one of the zucchinis hanging out in my fridge.


Lo and behold, my blogger buddy Jill came through again with one of her more recent creations – Baked Zucchini Fries.


Besides the fact I didn’t bother to actually measure any of the seasonings, I used panko instead of breadcrumbs, and a whole egg instead of just the whites, because I figure if I’m gonna have to crack an egg anyways, I may as well just skip the whole separating step, right?


I think they turned out rather pretty, don’t you? Served up with some yogurt ranch dressing for dippage.


To go with my fries, I whizzed up a chocolate cherry shake smoothie.


Frozen cherries, almond milk, Choc-a-Lot Vega Shake & Go Smoothie, and 1/4 of an avocado for extra creamy goodness.


If you haven’t tried adding avocado to your smoothies yet, get on it. It doesn’t affect the flavour, but makes it just that much smoother and creamier. Plus you get in some healthy fats. Also, go make some zucchini fries. I’m already pretty sure I’ll be making them again with the other zucchini I have in the fridge.

After lunch, I was bored. I decided to leave the house again, for a spontaneous eyebrow threading (where I think they made my eyebrows a little too thin), then decided to hit up the new location of Cooks & Corks – a local cookware shop. I’d always notice their old location when I would stop in at Planet Organic, but they were always closed by the time I was there. I did have a reason to check them out today. When I was looking for a container to put my ranch dip in for my zucchini fries, I realized we have nothing that’s the right size, or uh…pretty, to put little sauces and dips in. I was stuck using a small tupperware container. Which is fine, but I’d rather have a proper dish.


Fortunately, I found exactly what I was looking for when I got there – some glass pinch bowls. I picked up 4, and chatted with the owner about their new location. The grand opening is on July 31st, so I’m hoping to get down there for that. And they now have a kitchen, so they’ll be doing cooking classes. I’ll be checking those out for sure.

You’d think I would have had enough running about for random errands for the day, but once my sister was home from work, she convinced me to go with her to the local Casino to see if she could get some used playing cards. Did you know they can only use their cards once in the casino? It’s a great way to get cheap, or even free, decks of cards. We scored 4, and were on our way…not without some stops into Ikea and Bed, Bath, and Beyond before we reached home though.

Apparently mom thought we would have eaten dinner while we were out, so we were left to fend for ourselves for dinner. I turned to the freezer, and pulled out a bag of Gardein Cripsy Tenders to try out.


I’d picked up this bag with a coupon I received from the company, but had sort of forgotten about it. Last night seemed like as good as any night to try them out.

Since I had the oven heated up anyways, I turned my carrot into fries.


And made some kale chips.


Served up with a corn bread muffin and some sour cream & sweet chili sauce for dipping (in one of my new pinch bowls, of course).


My sister snuck in and stole a bite of my crispy tender, making a pretty swirl in my dipping sauces for you.


I paired my meal with a refreshing drink.


A bottle of DRY Vanilla soda.


If you aren’t into sweet drinks, but want something fizzy, these are a great option. An adult style soda, you might call it.


Next time I’ll have to try out Desiree’s drink recipe using the DRY vanilla & pureed peaches. Sounds delicious!

As for the Gardein Crispy Tenders? I thought they were tasty. Pretty similar spice wise and texture wise to a chicken finger. Obviously, they aren’t the most natural of products, but aren’t the worst thing you could eat either. My sister enjoyed the bite she stole as well, and this is coming from a chicken finger connoisseur!  So that must be saying something, right?

I considered a trip to the gym after dinner, but went for a walk instead. Turns out that was a better idea – I found $2 on my walk. Woo!

Speaking of walks – I’m off for one now. So I shall leave you with photos of our basil – it’s flowering. I’m not sure if this is a good or a bad thing.

    Zucchini fries…..yum. Haven’t had those in forever and since my garden is now producing zuke’s, I’ll have to make some. Good thing I’m on vacay after tomorrow! I’ll have lots of time.

    Pinch off those basil flowers close to the first set of leaves and you’ll get larger leaves and a longer life on your plant….

    It’s possible to finish school without loans?? Seriously? I need to look into that! That’s one of the things I’ve been worrying a lot about but it would be so nice if I didn’t have to worry as much.

    Your dinner looks delicious! I’ve yet to try carrot fries but I think I need too. And kale chips.. have to try those too.
