Pizza MacGyver

Last night I was watching a new show called Freaky Eaters on TLC..mostly by chance, as it came on after LA Ink (love me some Kat Von D!) Anyways, it’s an odd show – each show focuses on one person who has some weird eating habit, where two professionals (a nutritionist and a psychologist) try to help them overcome their weird eating habit in a week. The first episode was about a woman who only eats French fries for every meal. Literally. She gags when she eats other foods, including baked potatoes! And apparently she’s eaten that way for over 20 years. Ummm…how is that possible? But I digress. The next episode was about a man who only eats pizza. Every meal. And has developed an allergy to milk products because of it, among other health issues. You’d think that wouldn’t entice the watcher to want to eat either of those foods, at least not the next day.

But that’s exactly what I did.

On my way home from school, I have to walk past a pizza place as I go from the bus to the train. And it’s usually right around lunch time. And today, the smell was just so enticing, I knew I wanted to make a pizza for lunch when I got home.

Problem was, I couldn’t think of any good pizza ingredients we had in the fridge. I knew there were pitas in the freezer, and some baby spinach and onions in the fridge, which wouldn’t make for a very exciting pizza.

But then I started digging. My dad had picked up some pepperoni sticks, so I chopped up one of those. Then I found an almost empty jar of marinated artichokes. And there were a couple of slices of tomato leftover from burgers the night before.

As for a sauce, I simply brushed some olive oil on the pita, and sprinkled it with chopped fresh basil and oregano from our herb garden, plus a little garlic powder. I baked it for a couple minutes before adding my toppings – which also grew to include some rehydrated dried porcini mushrooms I found in the cupboard, and a smattering of shredded aged white cheddar.

Finished off with a sprinkle of red pepper flakes, it turned out to be quite the gourmet pizza.

And here I thought I was just going to eat a pile of spinach and onion on a pita. I’m a regular Pizza MacGyver, I tell ya!

Have you cobbled together any interesting dishes lately when you thought you had nothing to work with? Do share!

UGHHH i hate that show, it grosses me out. the last time i tried to watch it, it was a guy who only ate cheeseburgers. i wonder if that’s the only type of “freaky eaters” they feature, or if they have people with other weird habits too. like having to coat everything in salt or not being able to eat foods that are a certain color or something.

i haven’t made anything tooooo recently…but i have come up with some coo lcreations before! it usually happens when i have fruits and veggies that are going to go bad and I’m forced to come up with some way to use them.

i used to have a stage where i only ate sweet potatoes for every was a week tho and i thankfully got out of that rut! haha. i mean i guess its better that its potatoes versus eating sugar for every meal but seriously, its so strange how some people get really obsessive to the point they limit to a certain group of foods!! but at least on the show they work at breaking those habits huh.

yea im pretty sure id have to go on that show if i taste your pizza. nothing else would remotely come close to appetizing after this!! DANG ❤

hmm i was trying to make chicken burgers once and i didnt have any chicken (talk about missing the most important ingredient lol) .. and i thought i wouldnt be able to make burgers until i saw a can of lentils and thought "ohh veggie burgers!" .. i tossed in oats and egg whites and bunch of spices..and some other random things- they turned out wonderful- it was a nice surprise 🙂

    xoxo ❤

Is it weird that that show sounds like something I would totally enjoy? I heard that Anderson Cooper eats kinda like that–he’ll eat one food (e.g., salmon) for one month straight, then change it up. Disordered eating fascinates me, I guess.

I’ve seen commercials for that show. The guy in it seems to eat only raw meat? WTF? I’d like to see an episode…I guess it’s like a train wreck, you just wanna watch, right?
