Filling Up On Pumpkin

*** Some things have gone down in the past 24 hours that have not been good. I’m going to continue on with Pumpkin Week, because I can’t share said situation right now. I need to write for a sense of normalcy, so please indulge me. And I apologize in advance if they are…melancholy. And for being so cryptic. I hope you all understand. ***

 

Pumpkin Week so far…

We’ve made overnight oats, miso soup, checked out a cheesecake, and whizzed up an awesome smoothie. What culinary destination awaits our star, the pumpkin, next?

Pumpkin filled sandwiches? Why not?! I mean, you can pretty much make anything into a sandwich filling, right?

I’ve tried a couple of combos that have turned out rather tasty, so I shall share those.

Sandwich #1

  • Silver Hills “The Big 16” sprouted grain bread
  • pumpkin puree
  • peanut butter
  • apple slices
  • cinnamon creamed honey

Sort of a twist on a peanut butter, banana, and honey sandwich. Actually, now that I think of it, banana might go nice instead of the apple. Hmmm.

Sandwich #2

  • Silver Hills “The Big 16” sprouted grain bread (what can I say, it’s my fave)
  • pumpkin puree
  • apple slices
  • brie cheese

As you can see, I grilled this one in an attempt to melt the cheese and soften the apple. Sadly, my grilling skills are lacking (I cannot, for the life of me, figure out my mom’s stove and her pans – I never get the temperature right), so my bread was cooked before my cheese got really gooey and the apples were crisper than I’d like, but at least it still tasted good. Definite potential there.

I’d also like to try out pumpkin as a hummus replacement in my avocado, cheddar, and hummus sandwich. I think it might work. Especially if I grilled it. Mmm. Wonder if it would go with a little tempeh bacon? Other nuts butters? So many possibilities!

Have you make pumpkin filled sandwiches? What combinations have you tried that were great? I’m looking for some inspiration for lunch!

    Pumpkin would be a good idea in a sammie, I think. I’m seeing a stuffed French toast using pumpkin, cream cheese, spices….Mmmmmm……

    I love pumpkin on sandwiches! It makes a great combo with a creamy cheese (e.g., Laughing Cow). Love the idea of adding PB in the mix though.
