I know yesterday was the official first day back at school for the majority of students (grade school and university) here in BC, but not for me! Sure, I could have made the trek out to UBC to participate in Imagine Day – the giant one day welcome back/orientation event for all students – but I had things to do, and sitting on a bus while it was almost 30 degrees C out didn’t sound appealing. And seeing as I don’t have classes on Wednesdays, well, school officially starts for me Thursday. In less than 10 hours to be exact.
Did I mention this is also my last year of classes? Which means this time next year I will be starting my Dietetics Internship? Can we say excited?!
This semester I’m taking 4 courses:
- Food Service Systems Management – Management responsibilities in quantity food production with emphasis on menu planning, purchasing and service. Includes planning and equipping food services.
- Clinical Dietetics I – The role of nutrition and the application of therapeutic diets in the prevention, etiology, and treatment of gastrointestinal complications/disorders, cardiovascular disease, diabetes, and obesity.
- Human Nutrition Over The Lifespan – Nutritional requirements and dietary patterns of healthy individuals throughout the life span.
- Principles Of Organizational Behaviour – An introductory examination of work organizations and the behaviour of individuals within them. Phenomena to be studied include organizational structure, environments, group processes, motivation and leadership.
Good thing I’ve got my books and pens ready to go.

I threw together a big batch granola bar recipe to freeze and take for snacks, or possibly breakfast if I’m running totally behind.
And I prepped ingredients for my morning smoothie. Which I will make in my new blender…you’ll find out about it later 😉
It is far too dangerous to be hacking into a young coconut at 5:30 am.
And oh yeah, I’ve finally finished organizing my office – aka the Homework/Blogging HQ!
My sister moved out in May, and it was decided that instead of turning her room into a spare bedroom, I could move my computer, bookcase, desk, etc out of our overcrowded rec room and into what would be deemed the office.
As you can see I’m
dorky cool enough to be rockin’ both the laptop and desktop on the same desk. It’s like a makeshift dual monitor set up. Oh how I miss my dual monitor set up I had at my old job…memories.
All of my books are now readily accessible, with two shelves reserved for my cookbooks and food magazines. I was actually surprised they all fit on two shelves.
The closet holds my cd collection (in the white drawers), all of my camera equipment, and my secondary pantry.
Apparently my “weird” food takes up too much precious space in the kitchen. Plus if I get trapped in here, I have snacks!
Sienna has taken a liking to the room – she enjoys having
my her couch back to lounge on. She supervised the whole project from start to finish.
It’s actually really nice to have a second space to call mine. It was hard moving back home after living on my own for 5 years – you get accustomed to having all sorts of room for your things, to hang out, whatever. Now I have a place I can escape, do my work, read, whatever. And it frees up our rec room as well. Everybody wins!
Now if you’ll excuse me, I am in need of shut eye. My 5:30 am wake up call is not going to be pretty. Or maybe it’s just me who won’t be pretty at 5:30 am 😉
