The Silence Has Ended!

Why hello there dear blog readers – hopefully there are still some of you around? I apologize for my extended absence. It was not intended. Turns out life was happening, and unfortunately this was what had to fall by the wayside. But I’m back, and plan to be here for awhile.

So where exactly have I been these past…weeks? Months? Yikes! Where do I even begin?!


I finished all of my required courses for dietetics, and found out where my internship placement will be in September. And yes, I am lucky enough to be staying in Vancouver for internship – in fact, I actually got my first choice!


I got a promotion at work. I seem to be there a lot.


Oh yeah, and I have a new home.


It’s true – in the midst of all the craziness, I decided it was time to be back out on my own. Don’t get me wrong, I am forever grateful that I was able to live with my parents when I made the decision to go back to school to become an RD. But the time had come for me to have my own space again, so I made it happen.

I have officially left the suburbs for the big city of Vancouver. Not that it’s much of a stretch to move from Coquitlam to East Van, but it sounds impressive, no? Plus it puts me closer to all of the things I enjoy, and I’m commuting distance between work and internship.

Oh yeah, and I now have Instagram for my Android. Don’t worry, I won’t turn my blog all hipster or anything.

My place is small, but that’s okay because it’s just me and the furball. I must admit, I’m excited to have my own kitchen again. Want to see?

Who needs cupboards and counter space? It’s not like I have 8 or 9 kitchen appliances I want to store.


Seeing as my dishes and appliances take up pretty much all of the cupboards, I decided to invest in some pantry shelves and a butcher’s block to make the space more functional.


I also made sure to add some decorative touches.

So what have I been getting up to food wise in my new home? I would love to tell you I have been creating epic masterpiece after epic masterpiece, but it would be a lie. Time has not been on my side to allow that, but now that I’ve stocked my shelves and have unpacked *most* of my boxes, I’m going to make the time to get cooking more. It makes sense to do so really – it saves me money, is generally healthier, and it makes me happy 🙂


Once I finally unpacked my camera, I was able to capture a few things to share. Side note – turns out I have pretty decent lighting in my kitchen for photos. Yay!


A simple Caesar salad topped with fresh west coast shrimp made a great quick week night meal, especially paired with some crusty garlic bread from the oven.

I have also made some more involved meals, such as a hearty chicken stew.


The stew gave me a reason to test out how my oven bakes things.


I made some biscuits, which turned out okay, but seems my oven runs a bit hotter than the temperature states. Good thing I didn’t try out something fancier like a cake first!

Speaking of baking, I’ve also managed to explore my neighbourhood a bit, and may have found my go to local bakery.

That’s all for now. I hope you understand why my absence was necessary, and that you will continue to read along as my foodie adventures into internship carry on. I’m sure there will be oh so much to share.

    Okay – I so want to go to that bakery now! Everything looks delish!!! Maybe on our Ugo & Joe’s outing we can stop by your bread place! 🙂

      Yes! I have also tried their Mexican brownie (delightful), and my sister had some thumbprint cookies she gave the thumbs up to.

    Nice place M! Looks like uve settled in nicely. I’m livin out in the deer lake area and with working in the dtes I’m driving thru your neck of the woods almost daily. I NEED to know the name of that bakery! Lol must check it out. Do tell!

    Nice to see you back. Your apartment looks great. You made good use of the space you have. The lighting is fantastic for a basement suite!

    Congratulations first of all on all your new advances with school and living. Your humble new abode is quite lovely my dear! Everything over there is so expensive and little diggs like that are hard to come by. Nicely done 🙂

    Btw, stop scaring me with your baking skills. Do you know what people would kill to have Tim Hortons serve their sausage breakfast sandwich on ONE OF THOSE Homestyle Biscuits!!! WOW! So fluffy and freshly baked ❤ You have madddd skills!!!
