The 3 Ingredient Meal

I want to share with you a super simple, filling, and totally delicious meal. I guess I could call it a recipe, but I feel a bit guilty giving it that title when it only contains 3 ingredients.

I can’t say this was some genius idea I came up with myself. I’m sure I saw some rendition of it on a blog at some point in time. If it was yours, well, let me know!

A baked sweet potato, filled with cottage cheese and topped with salsa. That’s it. I told you it was simple.

So what exactly makes it so great? I think it’s the combination of flavours – sweet, salty, and spicy. Not to mention how filling it is – all that protein and fibre will keep you going for awhile. And it takes no time to make if you “bake” your potato in the microwave.

If you want to really round out the meal, pair it with a simple green salad or some sauteed greens (like the kale I had with mine). Great way to get in those dark green and orange vegetable servings we are supposed to every day.

 

The 3 Ingredient Meal

serves 1

  • 1 small sweet potato
  • 1/2 cup cottage cheese
  • 2 – 3 tbsp salsa of your choice

1. Bake sweet potato. Use the microwave to save time.

2. Cut potato open, allow steam to escape, and top with cottage cheese and salsa. Dig in and enjoy!

    I love sweet potatoes with cottage cheese, but I don’t think I’ve ever thrown salsa into the mix. Great idea!

    I used to always do sour cream and salsa on baked potatoes but cottage cheese would just give that much more of a protein punch…. done and done!

    Add some seasoned black beans to the mix and it’s one of my very favorite meals! Makes an awesome lunch or a lazy dinner. Soo good! And super healthy.
