Taste Test – Spaghetti Squash

Fact: I have not tried every vegetable known to humankind.

 

I know, shocking news.

 

But I’m working on it. Which is why one day I decided to pick up the most adorable spaghetti squash. Ever.

Is that not the cutest little squash you have ever seen? The perfect size for a gal living on her own, and the perfect size for taste testing. Sure, I have enjoyed many other types of squash in the past, but you just never know – what if it tastes weird? What if the texture creeps me out?

I never really had a plan for what I was going to do with my wee squash. It sat with the rest of my root veggies, patiently waiting for me to determine its fate. One day I saw someone make something (so descriptive, I know) with spaghetti squash on their blog, and it reminded me of this guy.

Everyone seems to love using spaghetti squash as a “healthy” pasta replacement (I use quotes, because I don’t actually think pasta is unhealthy). I’m not a big pasta sauce person (all those damn tomatoes), so while my squash was roasting away in the oven, I grabbed some random items from the fridge and pantry, and put together a less than picture perfect dish.

I swear there is some herbed cream cheese/roasted spaghetti squash mixture hiding under the sautéed onions and mushrooms, steamed broccoli, and white cheddar.

Ah ha! There it is!

Aside from the decidedly ugly dish I put together, it was tasty. Tasted like squash…mixed with cream cheese and herbs and spices. No creepy texture. It’s no pasta though, that’s for sure. But it is a good way to get in some extra servings of vegetables into your meal if you want to use it as such. And getting in some extra veggies is never a bad thing.

I’d buy spaghetti squash again – but maybe you can share some of your favourite (tomato free) ways of eating it so I don’t end up with another ugly plate like that one?

    Confession – no matter how long I’ve known you, I never remember that you’re not into tomatoes! 😛 One of these days I’ll figure it out!

      Tomatoes, cilantro, olives – they are all on my “will not eat” list.
