Random Eats

Hello there wonderful blog readers! I hope the weather is beautiful and sunny where you are like it is here in Vancouver today – looks like spring has officially arrived. Perfect timing too, because up until now I’ve been one busy bee. Oh sure, that whole internship thing keeps me pretty occupied anyways, and I have that whole job thing to go to on the weekends. But in the past month I added one more thing to my plate – moving into a new home. As such, I spent that month on a mission – eat up the random assortment of items in my fridge/freezer/pantry. Since I wasn’t going to have much time to experiment with new recipes, I instead just took photos of some of my eats to share with you. Because sometimes that random combination of ingredients turns out to be one damn good meal!


Fried rice – which used up some ham from my freezer, eggs from my fridge, and the rest of my short grain brown rice.


Popcorn fancied up with crumbled kale chips. Not gonna lie – I never got into eating them on their own, but they made a great popcorn seasoning!


So. Many. Smoothies. But I conquered that old tub of Vega Whole Food Optimizer (now Vega One) like a boss. And now I have a need to watch this video. (ETA: In case you didn’t get the joke in this sentence, you should be warned the video falls into the “not safe for work or small children” category)


Roasted root veggies with feta and walnuts. Yes, this was dinner one night. I’m okay with it.


A surprisingly amazing salad. I say surprising, because I have to be in the mood for salads, and I never seem to be truly satisfied with ones I make myself. I credit this salad success to Estevan Smoked Albacore Tuna, and a perfectly ripe mango.


I found some chili steak in the freezer, and used up the end of a package of egg noodles to go with them. Also featured – the end of a bag of frozen corn.


The last few potatoes in the pantry just begged to be made into my favourite Indian curry (which, I realize, I’ve never shared the recipe for). Bonus – it also used up the rest of the frozen spinach and peas. Woot!

Moving is a great way to get creative in the kitchen – not only did I avoid wasting food, I had a pretty varied assortment of meals throughout the past month. Not that I want to be moving often – the packing part, and then unpacking part…which I’m still working on. But I’m super excited for my new place for so many reasons…but you’ll have to wait for another post to see why 🙂

    hope you are settling in well! moving is such a draaaaaaaaag, but it can be exciting too! I’ll probably have to move agaaaaaaaain in the summer! I’ve moved more times than I can count on 3 hands… but luckily this one will be for hopefully MANY years 😉

    also the foods look great!! i finally used up a really old package of frozen chicken meatballs and it felt so GOOD! lol

    and omg i love lonely island and i have never seen that LIKE A BOSS video! thank you for sharing, M!!! hahaha
