Today I thought I’d share one of my smoothie creations, because it was just that good that it deserved a blog post. Plus it uses one ingredient I should really pick up more often – Thai young coconut!
You know how there are countless brands of canned/bottled/cartoned coconut water available now? Well, this is where it comes from. And as much as I love the convenience of a can of coconut water for a quick refreshing beverage, it doesn’t quite compare to cracking open your own coconut and drinking that water. Perhaps it’s just the satisfaction of breaking into the coconut, hopefully without any injuries. But it is good stuff. Plus you get all of that lovely young coconut meat. Perfect for making smoothies with.
This smoothie has only 3 ingredients and is refreshing, delicious, and fairly filling with all of that coconut meat in there. The watermelon gives it great sweetness and a pretty pink hue, while the lime keeps it balanced with a tart bite. This is truly a summer smoothie if there ever was one. Now go get yourself a young coconut and start practicing your coconut crackin’ skills (there are countless videos that will show you just how to do it without massacring the thing).
Tropical Watermelon Smoothie
This creamy, refreshing smoothie uses just 3 ingredients – watermelon, lime, and young coconut. It’s sweet, tart, creamy, and delicious. A great source of potassium, and a source of calcium, Vitamin C, and fibre. Plus look at that colour – perfect for summer!
- 1 1/2 cups seedless watermelon, cubed
- 3/4 cup young coconut water
- meat from 1/2 young coconut
- juice of 1/2 lime
1. Add all ingredients to your blender. Whiz away until it is completely blended and smooth. Enjoy!
