Easy Fish Tacos with Pineapple Salsa

Anyone who knows me knows that I love seafood. Salmon, halibut, shrimp, lobster…if it comes from the sea, sign me up! It’s no wonder I had a previous life working in fisheries. When I go out to eat, I often gravitate towards the seafood containing menu items. One thing I see, but rarely order, is fish tacos. Don’t get me wrong – they sound delicious, and I get envious when I see other diners eating them. But here’s my issue – anything Mexican/Latin inspired often has the dreaded cilantro somewhere in the dish. Usually in the salsa or guacamole or somewhere else they can’t easily leave it out of. And this makes me sad.

So what’s a girl to do? Make her own of course!

I found myself alone for dinner one night as the boyfriend was away, so I decided it would be the night to try my hand at fish tacos. He’s not the biggest fish/seafood lover, so I gotta indulge when I get the chance!

I picked up all the ingredients on the way home one day. I decided to go with Pacific cod for my fish, because it was cheaper than the halibut at the store, but still a good, firm white fish that would hold up to a quick pan fry. Salmon would be a good choice too, but would provide a different flavour.

I also made my own guacamole and pineapple salsa (all cilantro free!) Honestly, it’s not that much more work to make your own salsa or guacamole. Just a little more chopping involved, but something you can do ahead of time as they only get better the more the flavours mingle.

I seasoned my fish rather heavily with some Organic Fair Cow Bay Seasoning (sort of like Old Bay Seasoning). It added a great spicy kick to the fish. No need for batter – which you often get when ordering fish tacos at a restaurant – when you have a great spice blend for flavour.

I paired them up with shredded cabbage for crunch, and a sprinkle of feta for a little saltiness. The pineapple salsa added a nice sweet heat and freshness, and the guacamole provided creamy richness. Serve them with whole wheat flour tortillas and squeeze of lime for a healthy, quick, and delicious meal. And if you must…add some cilantro. Just don’t tell me about it.

No need to eat out in a restaurant to enjoy fish tacos. These healthy, flavourful fish tacos are simple to whip up on a weeknight, and are a fun meal for you and your family to assemble at the table.

Easy Fish Tacos

  • 1 lb firm white fish fillets such as cod, or halibut, cubed
  • 1 tbsp olive oil
  • 1 tbsp seafood seasoning blend (I used Organic Fair Cow Bay Seasoning)
  • 8 whole wheat flour tortillas (6-7” diameter)
  • Homemade Guacamole (recipe follows)
  • Pineapple Salsa (recipe follows)
  • shredded cabbage
  • feta cheese
  • lime wedges

1. In a bowl, combine fish, olive oil, and seasoning blend.

2. Heat a frying pan or skillet over medium-high heat. Add fish, and brown on one side approximately 2 minutes. Flip over, and cook another 2 minutes. Remove from heat.

3.  Serve tortillas, fish, and all of the toppings family style and let everyone assemble their own. Enjoy!

Homemade Guacamole

  • 1 ripe avocado
  • 1/4 small red onion, diced
  • 1 small roma tomato, deseeded and chopped
  • juice of 1/2 lime
  • salt, pepper, garlic powder to taste
  • pinch of cayenne pepper (optional)

1. Combine all ingredients in a bowl, and mash until almost smooth – a few chunks are okay! Adjust seasoning to taste.

Pineapple Salsa

  • 1 cup fresh pineapple, chopped
  • 1/4 small red onion, diced
  • 1 fresh jalapeno, deseeded/deveined and diced
  • juice of 1/2 lime
  • pinch of salt

1. Combine all ingredients in a bowl and mix. Make ahead to allow the flavours to meld.

Note: Instead of shredding your own cabbage, just buy a bag of coleslaw mix. Tastes just as good, is inexpensive, and saves prep time.

Fish tacos – yay or nay? I think they are awesome!

Well, I use fish sticks when I make fish tacos, so I don’t think that counts! Ha! I’ll take the cilantro you can’t stand – my husband isn’t a big fan either. Your cilantro is like my hatred of onions! 😀
